He endlessly travels in search of new recipe discoveries and inventive ideas for the presentation and look of today. Often using menus from the 17th and 18th centuries, Chef Thierry Isambert recreates recipes that fit modern cuisine techniques while embracing a world of culture and fine dining. By using traditional French cooking techniques with a blend of Mediterranean, Caribbean and Pacific influences.
